Description
Red amaranth — the microgreen of our own laal maath — has striking crimson leaves and stems with a mild, earthy taste. Chefs love it for plating, because a few leaves turn an everyday dish into something that looks special.
It is one of our more delicate crops: the seed is tiny and the shoots are soft, so it takes 10–14 days and needs gentle handling. Use it within about 4 days and add it just before serving.
How to use
Plating, salad, canapes.
